Slow Cooker Pumpkin Oatmeal
Serves 4

Ingredients
1 cup steel cut oats
3 cups water
1 cup canned pumpkin puree
1 tsp vanilla extract
2 tbsp brown sugar (try a healthy substitute & use the brown sugar-sugar free recipe I posted below this post )
1/4 tsp salt
1 tsp pumpkin pie spice

Instructions
In a heatproof bowl that will fit inside your slow cooker combine all ingredients
Place bowl inside slow cooker
Carefully add water to the slow cooker until it is 1/2 way up the bowl on the outside
Cook on low for 8 hours
ENJOY!!
